Ingredients
- 6 large onions (chopped)
- 4 tbsp olive oil
- 1 tsp salt
- 5 cloves garlic (minced)
- 3 tbsp flour
- 1/2 cup white wine
- 6 cups beefless broth
- 1 bay leaf
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1 baguette
- 1 batch cashew cheese
Instructions
NOTE: Caramelizing onions takes a long time! The last time I did it it took 2 full hours, and even then they could've gone for longer. SOUP 1. Heat oil over medium-high heat, then add onions and cook until translucent, then add salt. Reduce heat and continue cooking until caramelized. 2. Add garlic and cook for another couple minutes, then add flour and cook for another minute. 3. Add the broth and seasonings and simmer for 15 minutes. BREAD Slice and toast in oven for a few minutes at 400F. SERVING 1. Ladle soup into bowl, then put bread on top, then cheese on top of the bread. 2. Broil until cheese is browned (about 5-10 minutes).
