Ingredients
- 350 g medium-firm tofu (gently squeezed)
- 2 yellow potatoes (cut into bite-sized pieces)
- 1 bell pepper (chopped)
- 1/2 onion (chopped)
- 2 cloves garlic (minced)
- 1 tsp black salt
- 1 tbsp nutritional yeast
- 1/4 tsp turmeric
- 2 tbsp soy sauce (to taste)
- 1/4 tsp black pepper (to taste)
- 1/4 tsp salt (to taste)
- 4 tortillas (may need more depending on size)
- 1 hot sauce (to taste)
Instructions
1. Parboil the potatoes, about 5 minutes. 2. Heat oil in a pan over medium heat, then add potatoes and fry for 10 minutes. 3. Add the rest of the veggies, and crumble the tofu into the pan. Add seasoning and cook for another 10 minutes, or until the veggies are cooked. Add additional salt and pepper to taste. 4. Lay out a tortilla on a clean surface, and scoop some filling onto it. Add hot sauce to taste, then wrap. Repeat until you run out of filling (or tortillas).
