Ingredients
- 1 tbsp olive oil
- 1/2 white onion (diced)
- 1 cup rice
- 2 cloves garlic (minced)
- 3/2 cups vegetable broth
- 1 jalapeno (chopped)
- 1 tbsp tomato paste
- 1/2 cup diced tomatoes (or canned tomato sauce)
- 1/2 tsp salt
- 1/4 tsp dried oregano
Instructions
1. Heat oil over medium heat, then add onion and cook until translucent, about 5-10 minutes. 2. Add rice and cook for 2 minutes until fragrant. 3. Add the rest of the ingredients and bring to a boil. Cover and reduce heat, simmering for 15 minutes. 4. Remove from heat and let sit for 10 more minutes.
