Ingredients
- 4 cloves garlic (minced)
- 1 small onion (diced)
- 3/2 cups milk
- 3/2 cups raw cashews
- 1/4 cup nutritional yeast
- 1 tbsp lemon juice
- 3/2 tsp salt
- 28 oz artichokes
- 4 cups spinach (loosely packed)
Instructions
1. Pour boiling water over cashews in a bowl to soften, for at least 5 minutes. 2. Saute the onion and garlic for 2-3 minutes. 3. Add milk, cashews, nutritional yeast, lemon juice, and salt to a blender and blend until very smooth. 4. Add the rest of the ingredients and pulse a couple times (do not blend), for a chunky texture. Add additional salt to taste.
