Ingredients
- 20 oz condensed mushroom soup
- 16 oz plant-based sour cream (eg Tofutti)
- 3/2 cup cheese shreds (eg Daiya cheddar)
- 1 package frozen hash browns (about 30oz)
- 1 small onion (diced)
Instructions
1. Preheat oven to 400F and spray a baking dish. 2. Add mushroom soup, sour cream, hash browns, onion, and 1 cup of cheese shreds to the dish and mix. 3. Cover and bake for 45 minutes. 4. Uncover, sprinkle with the remaining 1/2 cup of cheese, and bake for another 45 minutes.
