Ingredients
- 1 cup JUST Egg
- 2 tbsp flour
- 1/4 tsp baking powder
- 1/4 tsp black pepper
- 1/4 tsp black salt
- 1/4 tsp cayenne powder
- 8 oz mushrooms (sliced)
- 1 small onion (diced)
- 200 g cheese shreds (eg one package Daiya cheddar)
- 4 oz spinach
Instructions
1. Sauté mushroom and onion in a pan over medium heat until the onion is translucent, then remove from pan and set aside. 2. Mix JUST Egg, flour, baking powder, and black salt in a mixing bowl, then whisk together. 3. Pour egg mix into the pan and cook covered until the top is solid, about 3 minutes. 4. Add mushroom, onion, cheese, spinach, and any other fillings you'd like, to one side, then carefully fold over. 5. Cook covered for another 2 minutes. 6. Repeat until you've run out of ingredients (makes about 6 omelettes).
